It’s strawberry season here in central Indiana. My mom & I took the kids to pick strawberries last Monday. We brought home 10 pounds of juicy strawberries. We put them on dipped them in sugar, put them on ice cream, and ate them in cereal. We also made strawberry shortcake and 2 loaded fresh strawberry pies.

Thought I’d share the recipe–it comes from Randy’s mom.

Strawberry Pie

Prepare pie shell ahead of time. (I won’t tell if you used a store-bought crust–just make sure you get the deep-dish kind.)

2 qt. (or a little more) fresh strawberries, rinsed, dried & hulled
1 C sugar

3 T cornstarch
3 T strawberry Jell-O powder
1 C water

Combine sugar, cornstarch & Jell-O in a small saucepan. Add water and cook over medium heat. Boil until clear & thickened. Remove pan from heat and let cool about 20 minutes before pouring over berries.

Meanwhile, arrange berries in pie shell. Pour glaze over berries, covering them completely. Refrigerate pie for at least 2 hours. Serve topped with whipped cream.
